| Rama Chicken or Swimming Rama |
Ingredients
- 2 bunces spinach
- 1/2 lb chicken breast sliced into small pieces
- 7 oz coconut milk
Peanut Sauce
- 1 T red curry paste
- 1 T chili paste with soya bean oil
- pinch of salt
- 1/2 T Lemon juice
- 2 T sugar
- 1 can 16 oz coconut milk
Preparation
- blanch spinach in boiling water with a drop of oil. Remove to a platter and drain excess water.
Cook'em!!
- Cook chicken in coconut milk until done.
- Sauce: heat 1 T oil in sauce pan, add red curry paste, chili paste with soya bean oil. stir well.
- Add coconut milk, sugar, salt, and lemon juice. Taste and add as desire. (note: the sauce should be sweet and bit sour)
- Remove only chicken from pan and place on top of bed of spinach. Pour peanut sauce over chicken. Serve.
