Rama Chicken or Swimming Rama

    Ingredients

  • 2 bunces spinach
  • 1/2 lb chicken breast sliced into small pieces
  • 7 oz coconut milk

    Peanut Sauce

  • 1 T red curry paste
  • 1 T chili paste with soya bean oil
  • pinch of salt
  • 1/2 T Lemon juice
  • 2 T sugar
  • 1 can 16 oz coconut milk

    Preparation

  • blanch spinach in boiling water with a drop of oil. Remove to a platter and drain excess water.

    Cook'em!!

  • Cook chicken in coconut milk until done.
  • Sauce: heat 1 T oil in sauce pan, add red curry paste, chili paste with soya bean oil. stir well.
  • Add coconut milk, sugar, salt, and lemon juice. Taste and add as desire. (note: the sauce should be sweet and bit sour)
  • Remove only chicken from pan and place on top of bed of spinach. Pour peanut sauce over chicken. Serve.
