Beef Masaman Curry

    Ingredients

  • 1 cup beef sliced thin
  • 3 cloves garlic crushed
  • 2 cups coconut milk 1/2 cup water (can coconut milk is really thick)
  • 5-7 small potatoes
  • 2 onions cut in four pieces
  • 3 tablespoons masaman curry paste
  • 1 teaspoon lemon juice
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1/2 cup shelled roasted peanuts
  • 3 tablespoons cooking oil

    Cook'em!!

  • In a large pot with water boil small pieces potatoes (cut patatoes in four) until soft or tender. Drain and set aside for a while.
  • In large saucepan, heat the oil, brown garlic, stir fry curry paste for 2 minutes.
  • Add beef, stir well. Add coconut milk.
  • Add potatoes, fish sauce, sugar, onion and peanuts.
  • Cover let simmer for 10 minutes.
  • Taste and add as needed. Remove from stove.
  • Serve with rice
  • Enjoy it!

Suggesstion: Instead of beef you can substitute with chicken, pork or shrimp.
