Crispy Noodle (Mee Krob)

Ingredients

  • 1 package Maifun (rice sticks)
  • 3 c oil for deep fry
  • 1/3 c diced deep fried tofu
  • 1/4 c chopped green onion
  • 1/2 lbs shrimp shelled, cleaned and cut into small pieces
  • 2 T cilantro
  • 1 T finely chopped shallots
  • 1 T lemon or orange peel finely chopped

    Sauce

  • 2 T vinegar
  • 2 T sugar
  • 3 T Fish sauce
  • 1 t tomato paste

Preparation

  • Soak maifun in water for 15 minutes and drain.

Cook'em!!

  • Fry maifun in hot iil until puffed. Remove and set aside
  • Heat 3 T oil in sauce pan. stir in shrimp. Add shallots, diced tofu, and tomato paste.
  • Combine remaining sauce ingredients in sauce pan and reduce heat to thicken the sauce.
  • Add nooldes to pan and mix with sauce. Place on serving plate and top with green onion and cilantro
  • Enjoy it!
