Curry Noodle (Kanom Jeen Namya)
Ingredients
- 1 package Japanese Somen
(12 oz.)
- 3 cups water
- 1 teaspoon salt
Sauce ingredients
- 2 cups coconut milk
- 2 tablespoons red curry
paste
- 2 tablespoons fish
sauce
- 1 pound fish meat boiled
(halibut or cod)
- 1 tablespoon roasted
red onion or shallot and garlic
Cook'em!!
- In large pot, bring 3 cups
of water to boil, add Somen, boil for 5 minutes.
- Add salt, boil for 2 more
minutes. Drain and rinse in cold water.
- Place on serving plate.
Sauce
- Boil the fish for 10
minutes. Drain.
- In a mortar pound curry
paste, and roasted onion and garlic until smooth.
- Add cooked fish, pound
until well mixed.
- In a pot, with little
cooking oil, stir fry the mixture well.
- Add coconut milk, cook
over medium heat.
- Bring to boil, add
fish sauce.
- Stir well, remove from
heat
- Serve with Japanese
Somen.
